French Confit Pot ,Pot a Graisse ( Grease Pot)
19th Century country French confit pot is a fine example of the pinnacle of evolution of the clay pot as used for foodstuff storage. The concept dates back thousands of years, and nobody knows for sure when some genius realized that by leaving the outer lower half of the pot unglazed, that simple evaporative cooling would keep the contents of the pot cooler especially during the summer months, buried halfway into the soil underneath the home. Such was the custom in Western Europe and we're sure many other places, for centuries before the advent of refrigeration. Today such hand-crafted charming pots are desirable for their good looks and rustic appeal, with earth tones that blend with just about any color scheme. Currently Used in kitchens to hold cooking utensils, for instance!
